Broccoli & Kale Salad Recipe
A delicious Broccoli & Kale Salad that is on the table in 25 minutes.
For the Dressing
- 1 tbsp almond butter
- 1 tbsp honey
- 1 tbsp balsamic vinegar
- 2 tbsp lemon juice
For the Salad
- 1/2 Broccoli
- 1 1/4 cup Kale
- 1 1/4 cup Salad leaves
- 1/4 cup Raisins
- 1/4 cup Almonds chopped and roasted
- 1 tbsp Olive oil
- Preheat oven to 400°F
- Place the florets of brocoli on acooking tray, drizzle with the tablespoon of olive oil olive oil and season with salt and pepper. Cook for 10 minutes then add the kale for the last 10 minutes of cooking, then remove from the oven when tender.
- Place the almonds and raisins, broccoli, kale and salad leaves in a mixing bowl. Then gently mix.
- Combine all the dressing ingredients and drizzle over the salad. Mix well before serving.
