
Courgette and sweet potato hash recipe
A delicious Courgette and sweet potato hash recipe that is super quick, super tasty and immune boosting.
Ingredients
- 450 g Sweet Potatoe Peeled and cubed
- 2 cloves Garlic Roughly Chopped
- 1.5 tbsp Coconut Oil
- 2 Medium Courgettes Cubed
- 1 Onion Chopped
- 8 Eggs
- Handful Parlsey Roughly Chopped
- Cayenne pepper For seasoning
Instructions
- Place the sweet potatos in a pot of boiling water for 3-4 minutes, then drain.
- Heat a ½ tablespoon of the coconut oil in a pan, at a medium heat. Then add the courgettes , sweet potatoe onion and garlic, and fry for roughly 5 minutes, until thoroughlycooked and browned. Season to taste with salt and pepper, andthen set side
- Warm a pan with the remaining coconut oil and fry the eggs how you like them
- Divvy up the veg on 4 plates, then place the fried eggs on top and top with parsley, cayenne pepper, salt and pepper, to your liking and serve.
