Ingredients
  

  • 1 Avocado Peeled and cubed
  • 1 oz Parsley Chopped roughly
  • 1/4 cup Quinoa
  • 1/2 Cucumber Cubed
  • 1/2 Courgette Cubed
  • 1 Red onion Diced
  • 1 lemon Juice only
  • 1 tsp Olive oil
  • 1/4 cup Mixed seeds and nuts For garnish

Instructions
 

  • Combine parsley, avocado, quinoa, cucumber, courgette, and onion in a bowl
  • Drizzle with olive oil and lemon, season with salt and pepper, then mix to combine and serve sprinkled with nuts and seeds as a garnish
