Edamame Bean Hummus Recipe
Heavenly mouth watering hummus made from edamame beans. Serve with pitta bread or raw veggies. You could even create some tasty sandwiches.
- 200 g edamame beans
- 1 clove garlic
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 2 tbsp tahini
- 1 tsp ground cumin
- 3 leaves mint
- salt& pepper to season
- Blitz the edamame beans and the remaining ingredients in a food processor until smooth and creamy. Add a little water if necessary, to achieve the desired consistency .
- Serve with pitta bread or raw veggies.
Pour any leftovers into an airtight container and store in the refrigerator for up to 5 days.
