
Immune-boosting fried egg breakfast recipe

Equipment
2 Frying Pans You could use 1 if you wash
1 Food processor Optional
1 Chopping knife
Ingredients
- 2 cups Broccoli
- 1 clove Garlic Minced
- 2 tbsp Pumpkin Seeds
- dash Lemon Juice To your own tatse
- 2 tbsp Coconut Oil
- 1/4 Onion Chopped
- 1 tbsp Dried Cranberry
- 4 Eggs
Spices
- 1/2 tsp Ground Turmeric
- 1/2 tsp Chilli Flakes
- 1/2 tsp Paprika
- 1/2 tsp Oregano
Instructions
- Chop and divide the broccoli into tiny pieces or make broccoli rice with a food processor.
- Warm 1 tablespoon of the coconut oil in a pan on medium-high heat, then place the minced garlic, chopped onion, pumpkin seeds and fry, for about 5 minutes, whilst stirring until browned.
- Then you want to add the broccoli rice, cranberry along with all the spices. Season with salt and pepper, stir and fry for another 5-7 minutes. If needed, add a little water to prevent any burning. Then add a dash of lemon juice.
- With a separate frying pan, warm the remaining 1 tablespoon of coconut oil, and fry your eggs. Once cooked place the eggs on top of the broccoli rice, and season to your taste with salt & pepper.
