Ingredients
  

  • 1 cup coconut milk
  • cup brown rice
  • 2 tbsp maple syrup
  • ¼ tsp vanilla extract
  • ½ tsp cinnamon
  • ¼ cup almond milk unsweetend
  • 1 peach peeled and diced
  • 2 tbsp  chopped hazelnuts

Instructions
 

  • In a small saucepan, mix the coconut milk and brown rice and allow it to boil for 5 minutes. Reduce the heat to low, cover the saucepan, and let the mixture simmer for 15 minutes, stirring occasionally.
  • Add maple syrup, vanilla extract, cinnamon, and almond milk to the saucepan, stirring well to combine all the ingredients. Continue cooking the mixture, for an additional 10 minutes, stirring occasionally.
  • Remove the saucepan from the heat and let it sit to cool down for 5 minutes. Serve your coconut rice pudding garnished with fresh peach slices and chopped hazelnuts.
