Simple granola recipe

- 160 g rolled oats
- 200 g mixed raw nuts (e.g. almonds, pecans, cashews, walnuts, hazelnuts, pistachios)
- 130 g pumpkin seeds or sunflower
- 100 g flaked coconut
- 40 g mix of seeds (e.g. chia seeds, hemp seeds)
- ½ tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ tsp salt
- 80 ml coconut oil
- 80 ml maple syrup
- 1 tsp vanilla extract
- 1 tbsp orange zest
- 100 g raisins
- 30 g dried starwberries
- Preheat your oven to 325°F (160°C).
- In a large mixing bowl, combine the rolled oats,mixed nuts, pumpkin seeds or sunflower seeds, flaked coconut, mix of seeds,ground cinnamon, ground nutmeg, and salt. Mix well.
- In a separate bowl, whisk together the melted coconut oil, maple syrup, vanilla extract, and orange zest until well combined.
- Pour the wet mixture over the dry ingredients and mix until everything is well-coated
- Line a large baking sheet with parchment paperand spread the mixture out evenly.
- Bake for 25-30 minutes, stirring once or twice,until golden brown.
- Remove from the oven and let cool completely.
- Once cooled, add the raisins and dried strawberries and mix well.
You can store this an airtight container at room temperature for about 2 weeks.
